Meatloaf Cupcake with Mashed Potato Frosting
So we love meatloaf in our house.....we make it a lot. Whenever I plate it I can't help but feel that all my hard work just looks like a sloppy mess on the plate. The secret to a great meatloaf is making it moist....that inevitably means that it breaks and falls apart when you take it out of the pan........not so pretty. So I started making them in muffin tins which worked great (you have to cook it a little less or they will dry out). Then I thought....what if I make a Meatloaf Cupcake with Mashed Potato Frosting....sounds gross right? Well.....it looks and tastes YUMMY! Great for kiddies.
I normally don't use frozen veggies but they worked perfectly to decorate these cupcakes. If you can't get your kids to eat veggies I would try this!!!!!! I just used a jumbo Ziploc freezer bag; cut one of the tips off, filled it with mashed potaoes and used it as a piping bag. It didn't make the nicest design but it worked. A friend of mine has since given me a heat resistant piping bag....so my next attempt will probably look a little nicer. I'll post an update. Here is a pic of the Meatloaf Cupcake plated.....carrots would be a nice addition for colour.
